
This sardine sandwich is especially beneficial for postpartum mamas as it is packed full of omega-3 fatty acids, a key postpartum nutrient. It's super easy to whip up, and the combination of healthy fats (mayo) and protein (sardines) supports lactation and promotes sustained energy, making it a perfect postpartum lunch or breakfast!
Ingredients:
1 can of sardines (I prefer ones in spring water or olive oil for this mix)
1-2 Tbsp homemade mayo (you can find the recipe HERE)
Juice of half a lemon
Handful of fresh chives
2 slices of sourdough bread, lightly toasted
Some crunchy lettuce leaves or a handful of spinach
Kelp salt & pepper to taste
Steps:
Lightly toast your sourdough.
In the meantime, open the tin of sardines into a bowl and add mayo, lemon juice, kelp, sea salt & black pepper & mix well.
Once your bread is toasted, it's time to make your sandwich! I think you can take it from here ;) Don't forget the crunchy lettuce!
