
It doesn't look like it, but this quiche is packed full of essential nutrients for mama and baby. Cottage cheese is a great source of calcium and, surprisingly, iodine. One cup of cottage cheese contains a whopping 65 mcg of iodine. Dietary Iodine is needed for a healthy thyroid for both mama & baby. This quiche is also rich in choline, which is essential for infant brain development.
Ingredients:
3 eggs, lightly beaten
250g cottage cheese
100g fresh spinach, washed & patted dry
3 onions, finely chopped
1 Tbsp coconut sugar
1 Tbsp balsamic vinegar
2 garlic cloves, finely chopped
2 spring onions, finely chopped
2 sprigs of thyme
1 tbsp bone marrow butter or ghee
Kelp sea salt & pepper to season
Steps:
Preheat the oven to 180 degrees.
Line a tart tin or a square tin with baking paper or grease with some butter or melted coconut oil. Set aside.
Heat bone marrow butter or ghee in a saucepan over medium heat, add the onions, sugar and balsamic vinegar. Reduce to low heat and cook the onions for 30-40 minutes or until they have become sticky and caramelised.
Add the onions to a high-speed blender with the beaten eggs and cottage cheese, but don’t blend just yet.
In the same saucepan, heat bone marrow butter or ghee over low heat and sauté the garlic and thyme for 5-10 minutes. Then add the fresh spinach and cook until wilted. Add this mix to the blender with the eggs, onions and cottage cheese. Use the pulse function on your blender to pulse the mixture so that it is combined but not completely blended. Season well with kelp, sea salt & cracked pepper, and then pour the mixture into your prepared tin. Cook in the oven for 25-30 minutes or until starting to brown on top and cooked through.
Enjoy warm with some homemade chutney, or you can freeze it for when baby arrives. Simply let it cool, cut it into desired pieces, wrap it in tinfoil and freeze in an airtight container for up to three months. Don’t thaw the quiche before warming it; simply preheat your oven to 180 degrees, unwrap the quiche and pop it in the oven on a tray.
