
I love this chewy hemp, ginger and oat slice so dang much it's the perfect afternoon snack, packed full of healthy fats, protein and fibre to support energy levels, mental clarity & digestion. Ginger is known for its lactogenic properties, helping to support milk production as well as strengthening the immune system. Hemp hearts are rich in protein & omega-3, three fatty acids that help to balance blood sugar levels and enrich breast milk. Additionally, oats are incredibly nourishing postpartum and are a great source of carbohydrates to support the milk supply.

Ingredients:
1 cup rolled oats
1 cup hemp hearts or hulled hemp seeds (shell removed)
1 cup desiccated coconut
2 tsp ginger powder
1/2 tsp baking powder
Pinch of kelp sea salt
1/4 cup maple syrup
1 tbsp fresh ginger, peeled & grated
1 tsp vanilla essence
1/2 cup coconut oil, melted
Steps:
Preheat oven to 175 degrees.
Line a square tin with baking paper.
Mix the oats, hemp hearts, coconut, ginger powder, baking powder and salt together in a large bowl.
In a small saucepan, heat the coconut oil, honey, vanilla essence, maple syrup and fresh ginger over low heat until well combined.
Mix the wet ingredients with the dry ingredients and stir with a wooden spoon until well combined.
Turn out into the tin and use a spatula to smooth the mixture out until even.
Bake in the oven for 25-30 minutes or until it starts to brown on top and around the edges.
Let cool completely before slicing into pieces. Separate pieces using baking paper in an airtight container and freeze for up to three months.
*Option to drizzle melted dark chocolate on top once the slice has cooled before storing. Chocolate just makes everything better, doesn't it?
