Ginger, Cashew & Date Bliss Balls

Packed with natural sugars from dates, they provide a quick energy boost, while cashews offer healthy fats and protein to support recovery and sustain energy levels. The addition of ginger, known for its anti-inflammatory and digestive benefits, helps soothe the body and promote healing. Super easy to make, these bliss balls are a wholesome, comforting snack any time of the day.

Ingredients:

2 cups raw cashews

2 cups dates, pitted and soaked

2 Tbsp fresh ginger, peeled & grated

1 tsp ground cinnamon

Pinch of kelp sea salt

1 cup desiccated coconut

1 Tbsp lemon rind

1 Tbsp chia seeds or hemp hearts

2 Tbsp coconut oil

Steps:

Soak dates in boiling water for 15 minutes or until soft.

In a food processor, pulse the raw cashews until they are finely chopped but not yet a paste.

Add the remaining ingredients (including the dates) to the food processor and blend until the mixture forms a sticky dough. You may need to scrape down the sides of the food processor bowl as needed.

Taste the mixture - at this point, you can add more ginger or lemon to suit your taste!

Using your hands, scoop about a tablespoon of the mixture and roll it into a ball between your palms. If the mixture is too sticky, you can moisten your hands with a little bit of water.

If desired, roll the bliss balls in desiccated coconut or crushed nuts to coat the exterior.

Place the bliss balls in an airtight container lined with baking paper and freeze for up to three months.
